The winemaking process followed temperature-controlled fermentation with a total maceration period of about 4/5 weeks what allowed a progressive and excellent extraction. The ageing was of 16 months in new French oak.
Color: Cherry, brick rim.
Nose: Powerful, candied fruit, mountain herbs, fine cocoa.
Palate: Balanced, full, tasty, structured.
Pairing: Iberian pork cheek with plum sauce, pumpkin and blue cheese risotto, eggplant lasagna and mozzarella.
